Take a bowl and mix together the wine, onion, lemon juice and oil
Immerse the shrimp and leave to marinate for about 1 hour in the fridge
Get a heavy-bottomed pan, pour in the oil and heat over medium-high heat
Add the garlic, spring onions, chili peppers and ginger and cook for 2 minutes, making sure to stir continuously
Then add the coriander and mustard, cooking for 1 minute
Add the tomatoes and cook for another minute, then turn off the heat and mix in the vinegar and brown sugar
Let the mixture rest in a sauce boat
Heat the grill and thread the shrimp two by two onto skewers
Brush lightly with the marinade and cook for about 3 minutes, 3 cm away from the heat
They should become opaque
Prepare a bed of rice on a serving platter and serve
