After removing the rabbit's head and feet, cut it into pieces
Blanch the sausage in water acidulated with a tablespoon of wine vinegar, drain it after 2 minutes, remove the skin, and cut it into thick slices
In a baking dish that can go from the oven to the table, place the rabbit pieces, the sausage slices, and the onion cut into wedges; season everything with a drizzle of oil, salt, and ground pepper, and bake at 200 degrees for about 40 minutes; at this point add the apples cut into chunks and 2 tablespoons of vinegar, and continue cooking in the oven for about another 20 minutes
