Wash and peel the oranges, making sure to remove only the yellow part
Cut only the peel of two fruits into very small strips and place them in a saucepan covered with water: cook them for 10 minutes, then remove from the heat and drain them
Blanch the almonds, peel them and chop them very finely
Place five yolks in a saucepan together with the sugar and vanilla and whisk them with a wooden spoon or an electric mixer until the mixture is soft and frothy
Dilute it by slowly pouring in the orange juice and stirring continuously to blend perfectly; if the mixture should be too thick, add a few tablespoons of water
Place the saucepan over the heat and keep it there until the cream just begins to boil, then immediately wash it and let it cool
Meanwhile, whip the cream and fold it into the now cold custard with the almonds and the small pieces of orange peel, stirring gently
Mix everything together and pour it into a pudding mold previously buttered, with fluted sides and a central hole
Place in the freezer for 2 hours
Then, to remove the pudding more easily, dip the mold briefly in boiling water, then dry it before turning it out onto the dessert plate
