Score the leg meat and lard it with bacon cut into sticks
In a bowl mix a glass of oil with three of wine, the chopped aromatic herbs, salt and pepper
Put the meat in this marinade and let it flavor, covered and in a cool place, for at least one night
Place the leg in a baking dish brushed with plenty of oil and cook in a preheated oven at 220 degrees for 10 minutes
Pour the marinade into the pan, lower the temperature to 180 degrees and cook for about half an hour, basting the meat often with the cooking juices; in this way it will be slightly rare
If you prefer it more cooked, leave it in the oven for another 10 minutes, but do not extend the cooking any further, otherwise the meat will become tough
Remove from the oven, slice the leg, arrange it on the serving platter and spoon the sauce over it
