Trim and wash the spinach, let it stew for 5/10 minutes until tender, then squeeze it and chop it very finely
Put it on the heat with a knob of butter, salt it, stir and let it dry well
Transfer it to a bowl and let it cool a little, then add an egg, 4 spoonfuls of Parmesan, a grating of nutmeg
Mix everything together and let it rest in the refrigerator for at least half an hour
After the indicated time, form many round balls from the mixture; as you make them, coat them first in flour, then in beaten egg and finally in breadcrumbs
Fry them in plenty of very hot oil and drain them on kitchen paper before serving
