Stuffed turkey hen is a traditional Italian dish perfect for the holidays. A delicious boneless turkey hen, stuffed with chestnuts, celery, sausage and aromatics, slowly baked to obtain succulent and tasty meat. A true delight for the palate!
Soak the chestnuts for 12 hours and cook them with the celery in broth
Pass 1/3 of them through a sieve
Mix the crumbled sausage, whole chestnuts and purée, salt, brandy and pepper
Stuff the turkey hen, tie it, salt and pepper it, and wrap it with slices of lard
Wrap it in buttered white baking paper
Place it in the oven on a rack and put a tray with broth underneath
Cook at 200 degrees for 2 hours
Serve with the cooking juices and the juice of 1 lemon
