Place the cheese in a bowl, add the washed and chopped sage and rosemary, a few drops of lemon and orange juice, and season with salt and pepper.
Lay the turkey slice on a work surface and spread it with the cream cheese and herbs mixture.
Roll it up on itself to form a log.
Place lemon and orange slices on the turkey roll, then tie it with kitchen twine to keep everything in place.
Melt 20 g of butter in a baking dish, add the roast and brown it lightly, then moisten it with the juice of one lemon and one orange mixed with 1/2 glass of wine.
Place the baking dish in an oven preheated to 200 degrees and cook for about one hour, adding a little hot water from time to time.
Remove the baking dish from the oven, take out the roast and keep it warm in the switched-off oven.
Put the baking dish on the stovetop and add a teaspoon of cornstarch diluted in a little water to the juices.
Mix well and let the sauce cook until it has thickened slightly.
Serve the roast sliced and drizzle with the sauce after decorating with the remaining orange and lemon slices.
