Cook the pasta in salted water.
Chop the pancetta, onion, carrot, and celery, put them in a pan with the butter and the minced beef, and brown everything.
Then add the cloves and let cook for 20 minutes.
When the meat has taken on some color, pour in the red wine and let it evaporate. Add the tomato, salt, and pepper.
Let it cook for another hour.
Drain the pasta and, after dressing it with the sauce, plate it and sprinkle with Parmesan, to taste.
