In a pan, melt 30 g of butter and brown the meat cut into large pieces
When they have taken on color, add a finely chopped onion and carrot

Add a clove of garlic, a bay leaf, salt and pepper
Bring to a boil and place the pan in a preheated oven at 200 degrees for one hour
Shortly before the end of cooking, splash with a small glass of brandy
Meanwhile, cut the peeled apples into pieces and brown them in a pan with the remaining butter for 10 minutes
Serve the meat with its cooking sauce and the apple side dish
