A summery, eye-catching appetizer: slices of bresaola filled with stracciatella (or another cream cheese) and a raspberry, folded into little bundles and served with crostini and salad. Simple, quick and ideal if you choose a quality bresaola.
Arrange the bresaola slices on a work surface.
Place a generous teaspoon of stracciatella or the chosen cream cheese in the center of each slice.
Add a raspberry in the center on top of the stracciatella.
Fold the bresaola slice into a little bundle around the filling, as in the video.
Prepare the bread crostini and season them with a drizzle of oil, salt and pepper.
Arrange the bundles on the crostini or alongside them, add the dressed mixed salad and serve immediately.
Tip: choose a quality bresaola (for example, supplied by a trusted butcher) for a better result. Variation: replace the raspberry with a piece of pear or some lemon zest for different flavors.
