Soak the gelatin to soften it
Meanwhile, crush the amaretti biscuits with a meat mallet until reduced to a powder
Place the milk in a saucepan over the heat with the vanilla essence and sugar; bring it to a boil then remove it from the heat
Separate the eggs, separating the egg whites from the yolks
Put the yolks in a bowl with the flour: stir with a wooden spoon to smooth out all lumps, then beat with a whisk for a moment
Add the powdered amaretti and soften the mixture with the kirsch
Finally dilute everything with the milk in which you have already dissolved the well-squeezed gelatin and stir gently, mixing the ingredients well
Butter a round pudding mold with a central hole, pour in the mixture and level the surface with the back of a spoon
Cook in a bain-marie in the oven for 1 hour
Then, as soon as the pudding has become lukewarm, put it in the freezer for 3 hours
At serving time, unmold the dessert onto a plate, first dipping the mold for a few moments in boiling water
