Unroll the ready-made puff pastry.
Meanwhile, peel and slice the apples. Place them in a bowl with the pine nuts, almonds, raisins, sugar, and lemon zest. Mix everything together and sprinkle with the brandy, leaving the mixture to marinate for 1/2 hour.
After rolling out the pastry, place half of the filling in the center and close the pastry, overlapping the edges.
Beat the egg yolk and brush the surface. Place the dessert on the baking tray lined with parchment paper and bake at 180 degrees for 45/50 minutes.
