For the dough: knead by hand in a bowl 100 g of flour, 20 g of butter, a pinch of salt and two tablespoons of warm water; form a smooth, even ball, brush with melted butter and let rest
Cut the apples into slices, sprinkle with sugar, add the raisins and a teaspoon of cinnamon, then cover with tissue paper
On a well-floured tea towel, roll out the dough very thinly with a rolling pin; spread the apples over the sheet, arrange them evenly, and using the edges of the cloth, roll up the strudel giving it the typical horseshoe shape
Place the strudel on a previously buttered and floured baking tray, brush with the remaining 1/2 egg and bake in a hot oven at 180 degrees for about 30/35 minutes
Dissolve the remaining 40 g of butter in half a glass of hot milk and, during baking, brush the strudel from time to time until all of it is used up
When cooked, dust the strudel with icing sugar and serve warm
