Wash all the vegetables required
Remove the toughest ribs from the cabbages and cut them into strips
Heat three tablespoons of oil in a pot and sauté the chopped onion, carrot and celery in it
When they have taken on a slight color, add the cabbages, season with salt, let them stew for 10 minutes, then add one and a half liters of water
Cover and let simmer for a little over an hour
If the soup is still too runny, continue cooking uncovered for a few minutes
Toast the slices of bread and place them in individual bowls
Pour the boiling soup over them, sprinkle with the grated cheese and put in the oven long enough for it to gratinate
