Dissolve the yeast with a little flour, sugar and milk and let it rise in a warm place
In a bowl, mix the flour, eggs, butter, sugar and lemon zest, a pinch of salt, the lukewarm milk and finally the yeast
Mix well and for a long time, add the raisins and rum
Fry spoonfuls in the hot oil, shaking the pan so that the fritters puff up on all sides
As soon as they are fried, place them on paper to absorb the excess fat and dust them with icing sugar
