Cheese cauliflower fritters are a delicious crispy and tasty side dish. This recipe is typical of Italian cuisine and requires few ingredients. The cauliflower is cooked and then mixed with flour, egg, cream and grated Parmesan cheese to obtain a soft and flavorful texture. The fritters are then fried in hot oil until they become golden and crispy. They are perfect to serve as an accompaniment to meat or fish dishes.

Separate the cauliflower into florets and wash them
Put them in the basket of a steamer and cook for about six minutes until they are just tender
Cool them under running water, drain them and place them on paper towels
Heat the oil to 180 degrees (at this temperature a cube of stale bread becomes golden in sixty seconds)
Salt and pepper the cauliflower generously
Beat the egg and the cream with a fork
Flour the cauliflower florets one by one, dip them in the egg and let them drain
Pass them through the cheese, shake them and pass them through the cheese once more
Fry the cauliflower florets in small batches for four or five minutes until they become golden and crispy
Drain them on paper towels and serve immediately
