
Chestnut Truffles are delicious, fragrant sweets made with chestnuts, dark chocolate and butter. They are perfect to enjoy during autumn, when chestnuts are in season. These sweets require a bit of patience to prepare, but they are definitely worth it. Their shape and flavor recall truffles, from which they take their name.

The quantities are for 50 truffles
With a pointed small knife, score the chestnuts on one side, placing them one by one in a saucepan; wash them, then cover them with cold water, add a bay leaf, fennel fronds and a pinch of salt
Cover the pan and cook the chestnuts for 30 minutes from the start of boiling
Remove them a few at a time from the water and peel them immediately; when done, pass them (there will be about 350 g) through a food mill using the finest disc, collecting them in a bowl
Melt the chopped dark chocolate in a double boiler or over low heat, incorporate it into the chestnut purée, stirring carefully with a wooden spoon; add half a packet of vanillin sprinkled in through a small sieve, a shot glass of Calvados and one of Centerbe, working the mixture until smooth
Beat the softened butter into a cream and incorporate it into the chestnuts as well
Using the mixture obtained, form balls that are not too regular and a little larger than a walnut; roll them in sweet cocoa and arrange them in a basket or on a rustic plate, or in paper cups
Before serving the 'truffles', keep them in the refrigerator for at least 60 minutes
They can be garnished with fresh mint leaves, candied violets or candied fruit, as desired
