Chicken Cacciatore is a traditional Italian dish, originating from the Tuscany region. It is a tasty main course based on chicken, slowly cooked with tomatoes, onions, carrots, and peppers. Garlic and juniper give the dish an aromatic and intense flavor.
Cut the chicken into eight pieces and brown it with 100 g of margarine
Add some plum tomatoes cut into slices
Salt, pepper, and mix
Let it flavor for a while with the pan covered
Then add small onions cut into slices, carrots cut into cubes, and strips of peppers
Mix again and cover, adding last two cloves of garlic, a few juniper berries, and the aromatic herbs (rosemary, parsley.. )
The chicken should be almost fully cooked when you remove the lid and increase the heat to dry the sauce and make it fairly thick
