Milanese minestrone is a delicious vegetable soup with pasta and bacon, typical of Milanese culinary tradition. Boil the pork rinds for 10 minutes in salted water, drain them and cut them into strips
Sweat the chopped bacon, onion and parsley in the oil; add the pork rinds and the vegetables for minestrone
Season and add 150 cl of hot water
Cook for 45 minutes, then add the rice and cook for 15 minutes
Add the chopped mixture, stir and turn off the heat
