The quantities are for 15 offelle
To make the pastry, pour the flour onto the work surface, mix in the icing sugar and make a well, add the softened butter and the 2 egg yolks, quickly working the ingredients together
Shape the dough into a ball, wrap it in a sheet of wax paper and place it in the least cold part of the refrigerator for half an hour
Meanwhile, prepare the filling
Sift the flour and cornstarch together into a bowl with 75 g of icing sugar: add two egg yolks, 15 g of very lukewarm melted butter and finally the two egg whites beaten until stiff peaks form
After the indicated time, roll out the dough to a thickness of about 3 mm and use a cutter with a diameter of about 8 cm to cut out discs
Distribute a little filling on them, brush the edge of each half disc with beaten egg white, then fold the dough in half to make crescents
Press the joining point well so that the filling does not come out while cooking: arrange the offelle on a buttered baking tray and bake in a preheated oven at 180 degrees for 35 minutes
Serve them warm or cold, dusted with icing sugar
