Cut the Fontina into cubes, put them in a bowl and cover them with milk.
Let soften for at least 2 hours.
In a saucepan, melt the butter in a bain-marie, pour in the Fontina with the milk, blend in the egg yolks and keep stirring until the cheese is completely melted.
Season with salt sparingly.
Cook for another 5 minutes without letting the mixture come to a boil.
Pour into fondue bowls, sprinkle with slices of white truffle and accompany with triangles of lightly toasted sliced sandwich bread.
