Soak the gelatin in a bowl with cold water
Pour the cream into a saucepan and heat it over moderate heat; remove it from the heat before it comes to a boil and immediately add the sugar, vanilla and the drained, well-squeezed gelatin
Stir thoroughly with a wooden spoon to make sure the added ingredients dissolve completely
Then transfer the mixture into a ring-shaped mold with a capacity of 15 l, let it cool at room temperature and then put it in the refrigerator to set for 2-3 hours
When serving, unmold the panna cotta onto a serving plate, garnish it with the raspberries and the well-cleaned mint leaves, and sprinkle it with the toasted, chopped almonds
Store the raspberry panna cotta in the refrigerator for up to 2 days.
