Mix the sugar, coarse salt, pepper and the dill sprigs
Remove the skin from the salmon, flatten it and cut it in half
At this point fill it with the prepared mixture and wrap it in plastic wrap
Place it in a baking dish with a weight on top and let it marinate in the fridge for about 48 hours
Once ready, remove the wrapping, cut it into thin slices and arrange it on a serving platter
In a bowl mix oil, vinegar, mustard and chopped dill, dress the salmon with this sauce and serve
