Peel the apples, cut them into wedges and place them in a saucepan, covering them with a little water
Cook the apples until they have broken down; pass them through a sieve and put them back on the heat so they dry out
Add the sugar and, stirring constantly with a wooden spoon, let the applesauce thicken
Then turn it into a bowl, season with cinnamon and butter and finally mix in the breadcrumbs and raisins that you have previously soaked in warm water
When the apple mixture is completely cold, gently add the egg whites beaten until stiff
Butter a pudding mold of about one liter, pour in the apple mixture and bake in a moderate oven for about forty minutes
When everything has set, unmold onto a plate and serve the tart very hot
