The use of genuine ingredients produced in-house allows the transformation of semolina and fresh eggs into a pasta that is totally different from others, in color, flavor, and aroma. The tagliatelle are processed using the Santoni method: bronze-drawn and slowly dried at low temperatures, to preserve the organoleptic properties of the wheat and give the tagliatelle roughness and porosity so that they can better hold sauces.
