The Carne Salada eye of round from Salumificio Freoni Danzi is one of the typical products of our area in Trentino. It is made from selected cuts of adult beef, which are trimmed of fatty and sinewy parts and massaged to make them softer and more delicate. Carne Salada is purplish on the outside and ruby red inside, delicate to the touch and with an elastic texture; its aroma is aromatic and intoxicating. It is a very lean meat, both because the leanest cuts are chosen for its production and because the fat is carefully removed. Carne Salada: history and interesting facts Carne Salada was already used in the nineteenth century to preserve meat. It was characteristic of some provinces overlooking Lake Garda and was considered a delicacy for the wealthy, the only people who owned livestock.
