The history of Cimbro The origins of Cimbro date back to around 1300, and it takes its name from the Cimbri people, who found a home in Lessinia at that time. Mostly shepherds and farmers, woodcutters and simple sheep breeders, they found their promised land among the meadows and rocks of the mountain range. With them began the production of this cheese, which has remained part of the Veronese tradition.
