La Casara offers us a high-quality Parmigiano Reggiano PDO, aged for 21 months. This is the version most closely linked to the Emilia-Romagna region, produced with cow's milk from cows raised exclusively on hay, without the use of feed. A highly prized product, refined in its fragrances and aromas. Considered the "King of Cheeses", it is still produced as it was eight centuries ago using a natural artisanal method, and is one of the few remaining foods obtained entirely naturally, without any additives: only milk, rennet and a little salt. PDO guarantee Its production is regulated and legally controlled by the Parmigiano Reggiano Protection Consortium. The use of raw milk, the exclusion of additives, the use of natural lactic cultures and aging for at least 12 months are the fundamental elements for recognition as a PDO (Protected Designation of Origin recognized by the European Union).
