A blue cheese with a compact and firm paste, made with only cow's milk produced by a small cheese factory in the Gorgonzola area. A very good semi-cooked cow's milk cheese, blue-veined and aged from 30 to 60 days and further aged with a dip in white wine for at least another month. At first glance it may seem like Gorgonzola, but it is not.
